Nearby RF noise fields are picked up by the two traces of the pair in an equal and opposite way, improving noise rejection. The phenomenon works in reverse too. Equal and opposite radiated fields by the pair cancel in nearby space, and cannot radiate as strongly. EMI characteristics are improved.
Differential routing forces each signal to travel nearly the same physical distance, minimizing skew.
